This cake combines a few of my favourite flavours. Chocolate, coffee and mascarpone. Decadent you say? I say don’t waste your calories on anything but!
2 layers of good ol’ chocolate cake filled and topped with mascarpone infused with good quality espresso, whipped till light and creamy. For a more grown up taste, coffee liqueur can be sprinkled (sparingly or otherwise) between the layers.
